When the neighborhood kids come over......

Have some of these home-made popsicles ready for them.

POPSICLES

1 package (3 ounces) orange-flavored gelatin

1/2 cup sugar or 12 packets Splenda or other artificial sweetener

2 cups boiling water

2 cups orange juice

Dissolve gelatin and sugar in boiling water. Add orange juice. Pour into plastic/paper cups or popsicle molds. Freeze until firm, 2-3 hours. Add sticks after freezing 45 to 60 minutes. Makes 16 popsicles, if using molds.

NOTE: Strawberry-flavored gelatin is good with cranberry juice and lemon-flavored gelatin is good with lemonade.

ICE CREAM CAKE

This recipe has been handed down to me from my grandma. It's especially good when the weather is hot and something cool is wanted.

This was always my son Rob's favorite birthday cake.

Angel food cake batter (either from scratch or a box)

1/2 gallon ice cream (any flavor you like)

1 pint whipping cream (I use Cool-Whip)

Garnish with strawberries or other garnish.

Prepare angel food cake batter according to directions. Divide batter and place in 2 bread loaf pans. Bake until done according to directions. Cool.



Cut loaves lengthwise 3 or 4 times. Slice ice cream into these layers and alternate between ice cream and cake.

"Frost" cake with whipped cream. Freeze immediately and serve frozen.

I am also a fan of the ice cream cake! But I live in Germany at the moment and its hard to find substitutes for Whipped Cream, any suggestions?

Julius, I hope this helps. You can make whipped cream out of soy milk or tofu, if you have access to it.

Soy Milk Whipped Cream

1/4 cup soy milk

2-4 Tablespoons sweetener (maple syrup, sugar)

1/2 teaspoon vanilla extract

1 teaspoon cornstarch

1/2 cup vegetable oil

In a blender or food processor, blend together the milk, sweetener, vanilla and cornstarch. Slowly drizzle in the oil while the blender is running. Blend until smooth and creamy. Chill for 1 hour before using. Makes approx. 3/4 cup.

Tofu Whipped Cream

1 1/2 cups soft tofu

2-4 Tablespoons sweetener

2 teaspoons vanilla extract

2 teaspoons cornstarch

In a blender or food processor, blend all the ingredients well. Chill for 1 hour before using. Makes approx 1 cup.

I have always wanted to try those popsicle molds. Maybe I will. All your desserts sound yummy. I am sure all the neighborhood kids love hanging out at your house in the summer! Nice hub.

Thanks, Janet21. Kids used to hang out many years ago. My children are all grown now, but I thought someone with kids would like the recipes.
