Different diets work for different people. Some can survive on a low-fat, low-carbohydrates lifestyle, while others simply need meat on their daily staples.

If you're following a specific diet especially if you're used to preparing easy vegetarian dinners, then you probably shun all animal products in all your meal courses.

Although there are different variations of being a vegan (some still welcome consuming milk and eggs), most vegetarians have switched to peas, beans, and nuts as protein source.

So, for vegetarians searching for easy vegetarian dinners, here are 2 ideas that will surely be a delight to your palates and utilize the healing powers of greens at the same time.

Brussels Sprouts

Brussels sprouts as a side dish

In a skillet, sauté 5 oz of diced pancetta. Add to the pan a tablespoon of olive oil, Brussels sprouts, ½ cup julienned onion, and ¼ cup of vegetable stock. Cover the pan and let it simmer for 20 minutes or until the Brussels sprouts are tender. Transfer to a plate and serve.

Sauté sprouts and toss a tablespoon of lemon juice. In a separate pan, add 2 peeled and sliced Bartlett pears, 1/3 cup apple cider, a pinch of nutmeg, and 2 teaspoons cider vinegar.

Cook the mixture until the liquid is almost gone and add the Brussels sprouts together with almonds.

In a medium skillet, add a tablespoon of oil and sauté ½ cup of finely sliced onion.

Add a tablespoon of dry sherry and ½ cup vegetable broth. Bring the mixture to a boil for about 2-3 minutes and add ½ lb. quartered sprouts, 1 tablespoon of salt, and a pinch of nutmeg.

Let it simmer for another 30 minutes over very low heat. Reduce to pulp, strain, and serve it hot.

Another one of my favorite easy vegetarian dinners is the Greek Salad. It is filling and tastes great.

Greek Salad

Ingredients:

½ cucumber, peeled and seeded 1 large ripe tomato, cored and cut into wedges 1 cup mixed salad greens 2 tablespoons feta cheese ¼ cup red onion, thinly sliced ½ green bell pepper, cut into rings

Procedure:

1. In a salad bowl, mix the cucumbers, tomatoes, mixed greens, onions, olives, and bell peppers.

2. Next, combine lemon juice and olive oil and toss in the salad.

3. Lastly, sprinkle the feta cheese on top of the salad.

There you have it, healthy vegetarian dinner recipes and healthy dinner salads that you can enjoy the way you want it cooked and prepared.
