I don't know about most of you but the chicken noodle soup I get out of a can doesn't do it for me. I have a great recipe for a semi-homemade soup that is easy and cheap. Plus the recipe can be made for a small amount or big enough for a house hold. In my recipe I am making it for 4-6 people.
5 packages of Ramen Noodles (oodles of noodles) chicken flavor of course
diced or pulled cooked chicken (I like the rotisserie from the store)
Diced Vegi: I like celery and green onions and a little carrot
Basically you want to cook the vegetables in a skillet with some olive oil for about 5-10 minutes depending on how big the pieces are. In a big pot fill half full of water and add noodles and seasoning packs. Bring to a boil and stir with a fork to break apart the noodles. Add chicken and vegi mixture to noodles and stir. Let cook on a simmer for about 10 minutes. Taste to make sure you don't need salt or pepper. The season mix is usually pretty good and you don't normally need to add anything unless you have to much water. Enjoy with a grilled cheese sandwich on a rainy day.
