Easy and Good Sorbet

Wow, just got through making Sorbet. It was really easy and surprisingly good. We made a Kiwi-Strawberry last week that had a good flavor but was too icy. So we changed a few things up and made a batch of Banana-Pineapple it was much better. I love sorbet on a hot summer day it is a lot more refreshing than ice cream and better for you too. It takes less than an hour to make and it is something you can do with your kids while there home for the summer. Also, it is healthy for them and we all want that. So here are a couple of recipes you might like.
Banana-Pineapple Sorbet
1 Pineapple cut into chunks
2 Chopped bananas
3 Tablespoons Sugar (we use splenda)
1 Cup plain non fat yogurt
1 Tablespoon Honey
Place pineapple and bananas into food processor and puree. Gradually add the sugar, yogurt and honey. Make sure you puree it good. Don’t want any big pineapple chunks.
Transfer puree into an Ice Cream maker and process according to your makers directions.
Strawberry-Kiwi Sorbet
¾ Cup Sugar (again we use splenda)
¾ Cup water
3-4 medium sized Kiwis
1 Cup fresh sliced Strawberries
Juice of 1 lime
½ Teaspoon vanilla extract
Combine the sugar and water in a small saucepan and place over low heat. Stir until the sugar is dissolved. Raise the heat and boil for 1 minute. Remove from heat and let cool to room temperature.
Peel the Kiwis and cut into quarters. Place the kiwis and the strawberry slices in the blender with the cooled syrup, lime juice and vanilla. Blend on low until the mixture is smooth, about 1 minute. Refrigerate until cold or overnight.
Stir the Chilled mixture, and then freeze in one or two batches in an ice cream maker according to the maker’s directions. When finished the sorbet will be soft but ready to eat, for a firmer texture, transfer to a freezer safe container and freeze at least 2 hours.
I like mine a little bit softer and not as icy, the first recipe with the yogurt is better than the simple syrup in my opinion. Try them both and then tell me which one you prefer. If you don’t like the fruit above try something you like and tell me about it. I love trying new things.
