My Easy Chocolate Chip Cookie Recipe Journey

Being a stay at home dad you always look for things like an easy chocolate chip cookie recipe. I decided one day to search the web for some easy chocolate chip cookie recipe sites and compare each of them. Below are the recipes I decided to make and my opinion of each of the easy chocolate chip cookie recipe ideas.

Easy Chocolate Chip Cookies By Cooking.com

 1 yellow or white box cake mix (yellow is better)
1/2 c. oil
2 eggs
1 c. chocolate chips
1 c. nuts (optional)
1 c. coconut (optional)

Blend all ingredients well. Fold in chocolate chips, nuts and/or coconut. Bake at 350 degrees for
7-8 minutes. Makes 2 1/2 to 3 dozen. Do not over bake very light brown around edges.

This easy chocolate chip cookie recipe was my favorite because it was the most simple to make and they tasted yummy.

 INGREDIENTS:
1 cup butter, softened
3/4 cup sugar
3/4 cup packed light brown sugar
1 tsp vanilla (plus a dash more)
2 eggs
2.5 cups unsifted flour
1 tsp banking soda
1/2 tsp salt
1 12-ounce semi-sweet chocolate chips
1 cup chopped walnuts (optional)


DIRECTIONS:
1. Cream butter, sugar, brown sugar and vanilla until light and fluffy.
2. Beat eggs and add them to the mixture.
3. Combine flour, baking soda and salt; gradually stir into creamed mixture.
4.Chop the nuts as fine as possible so that they almost look like a nutty flour. 
5. Stir in chocolate chips and nuts into batter.
6. Drop by teaspoonful onto slightly greased cookie sheet
7. Bake at 375 degrees for 8 to 10 minutes or until lightly browned
8. Cool slightly; remove from cookie sheet

On the recipe card my grandmother made this cooking note: One of the tricks to these cookies is to remove them just slightly before they are done.

Ingredients
1 cup butter, softened
1 cup sugar
½ cup brown sugar
2 eggs
2 teaspoon vanilla extract
2½ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 (12 ounce) package milk chocolate chips
4 ounces grated Hershey bar (optional – but it sure is good!)
**Note - for an occassional twist, when I'm feeling really extravagant, I add about 1 cup of chocolate coated toffee bits or white chocolate chips...why not go crazy once in awhile?!?

Directions
Cream together butter and both sugars until fluffy.
Add egg and vanilla and mix well.
Add flour, baking soda, baking powder and salt, mixing until well blended.
Stir in chocolate chips and grated chocolate (if using this or any other optional ingredient).
Drop by spoonfuls onto lightly greased cookie sheets.
Bake at 350 degrees for 8 to 10 minutes, just until cookies are very lightly browned around the edges.
Let cookies cool for a couple minutes on the cookie sheets before removing them to wire racks or waxed paper to cool completely.

Since they are slightly underbaked, they are too "fragile" to try to get a spatula underneath them when they are hot from the oven...be patient!
Note - as I said in the description, the key is to slightly underbake these for that chewy, gooey effect, so you do not want to have them browned on top - just ever so slightly browned around the outer edges is all. When you remove the pan from the oven, the cookies will "fall" in the center - that's ok...that's what makes them gooey and chewy when cooled. Bake one or two cookies your first time to see at what point you need to remove them from the oven for the perfect "texture" for your liking.
