Easy Guacamole
OK guys and gals, I picked this little recipe up in New Mexico. It is quick and easy and taste great.
What to buy:
- Three ripe avocados - how do you tell if they are ripe? a little soft to the touch.
- Two cloves of garlic - more or less - kinda depends on how much you like garlic.
- Cilantro - comes in a bunch - I use about a 1/2 cup unpacked- again add more or less based on your taste.
- Jalapeno pepper - one should do - if you like it hotter, add two or substitute serrano peppers
- One Lime
Mixing it all together- I hand chop, but a food processor should work fine.
- Cut avocados in half and remove seeds, spoon out the good stuff and place in bowl.
- Peel and finely chop two cloves of garlic and place in bowl.
- Finely chop cilantro and place in bowl.
- Remove seed from pepper or peppers and finely chop, again add to bowl
- Cut lime in half and squeeze juice from one-half in the bowl.
Now mix it all together like you would mashed potatoes. Get your chips and something to drink and enjoy.
