Easy Pineapple Upside Down Cake

Ingredients

 

1 box yellow cake mix

1 20 ounce can pineapple slices

1 stick butter or oleo/margarine

1/2 cup brown sugar

Maraschino cherries (optional)


Instructions

Preheat oven to 350 degrees F

Melt 1 stick margarine in a 13x9 inch cake pan

Sprinkle brown sugar on the melted margarine.

Drain the pineapple, and save the juice. Place the pineapple in a single layer on the brown sugar.

Make the cake per the instructions on the box, substituting the pineapple juice for the water. If the amount of water needed is more than the amount of juice you have save, add enough water to the juice to make up the difference.

Spread the cake batter on top of the pineapple.

Bake for 35-40 minutes, until a toothpick inserted comes out cleanly.

You can put maraschino cherries in the middle of the pineapple slices.

Cool (unless you can't wait), serve with whipped cream if desired.
