Raw Cafe - Macaroons

Bet You Can't Eat "One!"

This is so easy that if you have company coming this Memorial Day Weekend, make these for rave reviews!! Be prepared to give away the recipe!

A sure hit with the kids, you won't be able to keep them out of the kitchen while you're doing this, so let them help!!  These cookies don't have to be perfect, as their texture is rough, making them the perfect drop cookie for kids to do! 

Heavenly Chocolate Macaroons (Recipe straight from the angels)

Ingredients: You can double this recipe and I suggest it, they'll go quickly, especially warm!

  • 2 cups semi-sweet chocolate chips
  • 4 egg whites
  • 1 cup Splenda or sugar
  • 2 teaspoons vanilla extract, not immitation
  • 1/2 teaspoon lemon juice, fresh
  • 1 1/2 cup sweetened flaked coconut

Procedure:

  1. Melt chocolate in double boiler over simmering water and set aside to cool. (It's best if the water does not touch the bottom of the boiler that contains the chocolate pieces. You do not want to scorch the chocolate.
  2. Preheat oven to 350F.
  3. Line a baking sheet with parchment paper.
  4. Using an electric mixer set to high speed, beat the egg whites untily frothy, less than one minute. Add a pinch of salt and continue beating until the whites form soft peaks.
  5. Add sugar, ONE TABLESPOON at a time and beat for about 10 seconds inbetween each tablespoon until peaks are stiff. This will take between 5 and 6 minutes total time.
  6. Beat in vanilla and lemon juice just until well blended.
  7. Fold in coconut and melted chocolate. Watch videos for "how to fold."
  8. Using teaspoons, drop batter onto parchment covered baking sheet, keeping batter about 1 inch apart.
  9. When macaroons "puff," about 10 - 12 minutes, remove from oven. Do not overbake, edges should not be brown.
  10. Place baking sheet on wire rack and cool for 1 or 2 minutes.

Serve warm, but everyone will be in the kitchen by this time, and you'll be swattin' 'em like flies.

It's a good thing I've already done the shopping for weekend. I *love* macaroons, but chocolate macaroons sound wicked. No way could I eat just one!

Hi JamaGene, I'm sure they're full of calories, I'll have to look up similar recipes and see what the calorie count is...or maybe it is better for me not to know LOL The trick to these is not over-baking. They taste like straw then...but chocolate anything is good in my book. =)) thanks for stopping by!!

Hi wndererh, these are very easy, hardest part is whipping the egg whites, and that's not really hard...you can do it...and treat all those you know to these yummies. =)) thanks always for stopping in!!!

You have no idea. Practically every single line of your procedure presents a challenge for me. You are talking at the high school or college level while I have yet to enter preschool. I don't even know what a double boiler is!

ahahhaha you probably eat out ?  well, there's plenty of time, tackle one recipe that "speaks" to you...and pretty soon, you'll be a chef of your own style!!

Well, I boil water and make coffee. I can make instant noodles. And if I feel really adventurous, I can do scrambled eggs. :) If you can recommend a recipe suitable for someone of my skillset, I might just try it.

If not, I have got 3 McDonalds, 1 KFC, 1 Burger King, 1 MOS Burger, and lots of other hawker stalls within 100m of where I am. :)

MOS Burger is another burger chain - guess you don't get that in the US. Scrambled egg recipes? Cool! Something I could actually try. :)

Yep, it is like a McDonalds. Just checked and found out that it originated in Japan and has outlets in East Asia. I may be able to do some hubs about Singapore. My plate is kinda full at the moment but I can always start looking into that. :)

Pat writes: Tricia and I keep saying that we are going to write a Hub called 'how we lost weight'. I think that if I try your recipe (which sounds yummy) we might have to write 'how we gained back the weight we lost'. Maybe we could give ourselves a treat after reaching a goal?
