Egg-free/nut free/soy-free donuts and black and white cookies

Hi! I'm Patty and I have a brood of kids with food allergies.

Did you ever get frustrated trying to find a donut that doesn't contain eggs, nuts, or soy? If you are an allergy sufferer, than you know that dunkin donuts, entenmens, and most others, are , well, frustratingly out-of-the-question for us. Well, kiss your frustration good-bye, and get ready for some easy kid (and grown-up) friendly donuts, that are not only tasty, but much healthier and lo-fat too! So go ahead and indulge your family. Plus, the kids love helping you roll these tiny treats into little balls!

From the grocery store, in the refrigerator aisle, you can find the 'Grand' style biscuits. This is what you need.(of course check the brand and be sure it is free of the allergens).

Ingredient list

2 cans of pillsbury grands lo-fat biscuits (double check on ingredients)

1/2 cup of granulated sugar

1 tspn of cinnammon

1 bag of confectioners sugar

a couple of tablespoons of milk

vanilla extract

colored jimmies or sprinkles (check ingredients)

l can of Dunkin Hines Chocolate Icing

MUNCHKY DONUTS

Yield per can : dozen munchky donuts or 16 black and white cookies

Base recipe for munchky donuts

Preheat your oven for biscuits as directed, than remove the biscuits from the container. Placing a biscuit on your cutting board, cut it into four equal pieces. Roll each piece up into a little circle. One can of 8 biscuits will yield a little more than 3 dozen 'munchkin' style donuts! A great value!

Cinnamon and Sugar Munchkys

To make cinnamin and sugar munchkies; roll each unbaked donut in a mix of cinnamin and sugar. Take 1 tablespoon of cinnamon and mix it with 1/2 cup of granualted sugar. Place the mixture into a brown paper lunch bag. Add the unbaked donuts, and shake to coat. Place the donuts on a buttered baking sheet and cook as directed, checking to be sure they don't burn! They smell so goood when they are baking, and they are delicious warm or cooled off. My kids gave them the 'thumbs up'!

Powdered Munchkys

To make powdered donuts, bake donuts without adding any ingrediants. Remove from the oven, and place warm in a brown paper bag filled with confectioners sugar. Shake until all the munchky style donuts are covered. These are delicious served hot out of the oven, or cold! Yum! They are kinder to your figure than fried donuts, and really, really have a good texture and flavor!

Vanilla glazed munchkys

For other toppings, experiment and have fun! I have also baked , cooled and the glazed these little guys with a vanilla glaze. To prepare the glaze take 1 cup of confectioners sugar and add 2 tblspoons of milk, and a drop or two of vanilla extract. Stir , if the mixture is too thin, add a little more sugar, if it is too thick, add a little more milk. Take each baked, cooled donut and dip the top half into the icing glaze. You can add sprinkles for a little extra fun. Replace on a tray and cool! Delicious!

BLACK AND WHITE COOKIES

Using the same biscuit mixture, open can and remove biscuits. Take each biscuit, and separate into two even circles, by simply peeling off half of the biscuit. On a floured cutting board, flatten the dough using a rolling pin. Before rolling out the biscuit, here's a neat trick; place a plastic baggie on top of your biscuit before rolling to prevent it from sticking to the pin. These 'cookies' will be very thin. Place 'cookies' on a greased sheet and bake according to package directions, be sure not to overbake.

Remove from oven and cool.

In the meantime, prepare vanilla icing as directed above for the round, munchky style donuts. For the chocolate half, you can use your favorite recipee, or i just use the canned icing also (always checking label for allergins!). Ice one half with the vanilla icing, and the other with the chocolate icing. Refrigerate, so that the icing hardens.

These are a very good, lo-fat version of your bakery-style black and white cookie. They are 'no-fail' as you don't need to worry about egg-substitues, and when served 'chilled', are really terrific. Just don't forget to add that ice-cold cup of milk to wash it down with , when dishing out this yummy treat to your kids!

THANK YOU so much for this recipe. My son has a new allergy to eggs at the age of 7. The things he missed the most were my meatballs and Dunkin Donuts. I made these munchkys today and my whole family loved them...and talk about easy. I tried some with a chocolate glaze too! Absolutely fablous. Thanks again. (By the way, I used egg replacer for my meatballs and they came out great too)

This came at a great time! My baby daughter has food allergies, but my older boys are used to eating everything. I've been looking for an alternative for "MUnchkins" so that she doesn't have to feel discluded and we don't have to eat in secret. Thanks!
