81Eggless Cake and Biscuit cooking
How often have you decided to cook a cake or something and found you have no eggs? Well look no more it is quite simple.
No egg: If you run short of eggs then use 1/2 a teaspoon of bicarb with a dessertspoon of vinegar. Add this to the mixture last. (will replace 2 eggs). These recipes don’t require the vinegar though.
Spice cake with no eggs
Ingredients
2 tbls Margarine
3 tablespoons sugar
¾ cup milk
1 tbls golden syrup
1-1/3 cups S R flour
1 tbls milk
½ teasp bicarb soda
½ teaps cinnamon
½ teasp mixed spice (or spices of your choice)
Directions
Cream the margarine and sugar together. Add 1 tablespoon milk and golden syrup. Sift in flour with spices and bicarb soda. Slowly mix in the remainder of milk. Bake in a moderate oven for 30 to 40 minutes.
NB: I doubled the mixture and cooked it in my camp oven for 30 minutes. Time varies with camp oven cooking as it depends on the heat of the coals.

Ginger Cake
Ingredients
2 cups of plain flour
1 cup sugar
1 teaspoon Ginger
2 teaspoons bicarb soda
125 gm butter or margarine
1 ½ tbls treacle
1 cup milk
Directions
Melt butter, treacle, and milk in pan. Mix dry ingredients in separate dish. Add bicarb of soda to milk mixture just before pouring into dry mixture. Beat to batter. Bake for an hour in a moderate oven

Oatmeal Biscuits
Ingredients
125grm butter or Margarine
1 heaped dspn golden syrup
2 tbl water
1 level teas bicarb soda
1 ¾ cups flaked or rolled oats
¾ cup sugar
½ cup SR Flour
Directions
Put butter and golden syrup and water in saucepan and boil. Add carb soda then add to the dry ingredients.
Place in greased tin and press out flat. Bake at 180deg or 350 F for 10- 15 minutes
When cool turn out onto flat surface and cut into small squares.
More kitchen tips
Green Vegetables: Add a pinch of bicarb soda to the vegetable water; it will help keep their colour.
Dried vegies: Soak in small amount of soda and water to make softer
Note: I have cooked all of the above in a camp oven while traveling around Australia.
Actually my specialty at this type of cooking has been my Boiled fruit cake, scones and bread and butter puddings. You should all try cooking out in the open like this, it is great.

I've never heard of eggless cakes before. But then again, I've never been interested in cooking. :) I always stay away from cooking as possibly as I can. :D
beats me, I dont blame you but while on holiday I havent got much on the net time so have to amuse myself in other directions. Hence inventing or trying other methods of cooking without an oven except my camper oven when alowed to light fires. cheers thanks for stopping by.
