This recipe will satisfy vegetarians as well as not! Yummy, cheesy baked eggplant parmesan is a great dish to make for your family or friends. This recipe will feed 3-4, but just double or even triple the ingredients for your dinner! Also check out the recipe for Italian Bread Crumbs at the bottom of the page. Eat and Enjoy! 


Ingredients

1 Eggplant

2 large Eggs

Italian seasoned breadcrumbs (see recipe at bottom of page)

Flour

Olive Oil

Marinara Sauce

Mozzarella Sliced Cheese

Shredded Parmesean

Fresh Basil leaves


Recipe

1) Slice the Eggplant into lengthwise pieces (about 1/4inch). Leave the skin on.                

2) Heat olive oil in skillet (enough to coat the bottom)                                                            

3) Dip eggplant in beaten egg, then flour, back in egg, then bread crumbs (See how to make Italian bread crumbs at bottom of page).                                                                    

4) Fry two slices at a time in the skillet until golden brown. Turning once. 

5) Place 1/4 jar of marinara sauce into bottom of casserole dish.

6) Place layer of fried eggplant on sauce

7) Top with layer of mozzarella cheese 

8) Top with 1/4 jar more marinara sauce

9) Place last layer of eggplant

10) Top with remaining sauce, last layer of mozzarella, and layer of parmesan cheese 

11) Top with shredded basil leaves


12) Bake at 375 covered for 15-20 minutes

13) Remove cover and bake until cheese is bubbling and slightly brown.

Serve with spaghetti or angel hair pasta and freshly grated parmesan cheese! Yum!

Make it Healthier

Well as healthy as a fried, cheesy dish can be! Bake it instead! If you don't want to fry the eggplant you can bake it on a cookie sheet. Just drizzle some olive oil on the sheet and put the eggplant on top. The drizzle more on top. Bake until it is tender and golden brown.


Making Your Own Italian Bread Crumbs!

Slice a day old French bread loaf, or any other hard bread, and grind slices in a food processor until coarse. Add:

2 tablespoons dried parsely

1 tablespoon dried oregano

1 tablespoon dried basil

1 tablespoon garlic powder

1 tablespoon grated parmesan cheese 

Once you try homemade bread crumbs you'll never use store bought again!
