Brownies with a Hit of Caffeine

For all those coffee lovers, such as myself, this recipe is the right combination of chocolate and coffee in a cakie brownie. I wouldn't suggest this recipe for children or others who want to decrease their caffeine intake. Using a brownie mix, makes this recipe easy and fast.

  • 1 box brownie mix
  • 1 8oz. package cream cheese,softened
  • 1 egg
  • 1/3 cup sugar
  • 2 teaspoons instant coffee
  • 1 teaspoon vanilla
  • Preheat oven to 350 degrees. prepare brownie mix according to package instructions. Pour into a greased 13 x 9-inch baking pan.
  • Beat cream cheese, egg, and sugar in a small mixing bowl at medium speed with electric mixture until well blended.
  • Dissolve coffee in vanilla and add to cream cheese mixture, mixing until well blended.
  • Spoon cream cheese mixture over brownie batter. Cut through batter with knife several times for marble effect.
  • Bake 35 to 40 minutes or until cream cheese mixture is set.
  • Can makes up to 4 dozen, depending on how large you into squares.

Additional tips:

  • Cool well before cutting into squares.
  • Try flavored intant coffees for a more sophisticated taste.
  • Dust with powdered sugar for a festive look.
  • Drizzle with caramel syrup or other flavored syrups. Top with whipped cream and a cherry.
