Extreme Chocolate Chip Cookies

These cookies have been evolving for years. I rarely make them the same way twice, but this version is my favorite... at the moment.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tspn baking soda
  • Pinch of salt
  • 1 stick softened margarine or butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 tblspns orange juice concentrate, thawed to room temp
  • 1 tspn espresso powder
  • 1/2 ripe banana, mashed with a fork
  • 2 tspns vanilla extract
  • 1/2 bag semi-sweet chocolate chips
  • 1 tube (or half bag) Mini M&Ms
  • 1 cup chopped walnuts

 

Directions

Preheat the oven to 375 degrees (190 degrees C). With a whip, mix together the flour, baking soda, salt and espresso powder.

In a large bowl, cream together the butter, sugar, orange juice concentrate and mashed banana until smooth. Mix in the eggs. Then stir in the rest of the ingredients, one at a time. Then add the powdered ingredients. Drop by teaspoonfuls about 2 inches apart onto a greased baking sheet.

Bake for 8 to 11 minutes in the preheated oven. Allow the cookies to cool for about five minutes before removing them to a wire rack or wooden cutting board. If you're using a cutting board (like I do), turn them over after about ten minutes.

I'm cookin' this one and takin' it to the kids if I can stop myself from eating them, rolling in them, washing my hair with them, and dabbing them behind my ears.   GOD!  =)

BTW, have you ever heard of "spanking" the cookies about halfway thru the baking time? You take the cookie sheet out of the oven and bang it twice on the counter until they collapse and then they are a bit chewy and not crisp...just wondered.

Wow you're quick. I hadn't even finished editing yet - the picture placement kept giving me trouble.

Wouldn't "spanking" and "rolling in them" kinda go together?  ;)

I wouldn't recommend spanking these, though.  A bonus of adding the banana is it keeps them chewy and prevents them from getting too crisp.

Let me know what the kids think.

PS: I'll definitely come to your funeral... I'll bring the food!

I'm with Mariusue on this one. The chocolate chip cookie is the bomb of all cookies! I will definitely give these a whirl. As long as I don't check my blood sugar for a few days I'll be fine. Good grief these look good :)

Thank you, Rob, for your feedback. I'm very interested in hearing reviews after you taste them. I think they're "da-bomb" (and a bag o' chips!), but some traditionalists in my family don't care for them.

I got your correction on the amount of banana....thanks for being so precise...I'm with you...banging these babies on the counter is probly not necessary. I can't wait to make them.

Karen, live a little... try the cookies. No one says you have to eat them ALL. Share 'em with your coworkers... or the kids down the street... or the homeless! And thanks for the thought regarding Goodle, but I'm not signed-up.
