Fall Into Fall With These Hot Chili Recipes
If you are wanting to cut back on meat, this chili is a good place to start.
Kids love it, and no one will be saying "Where's the Beef?" when eating this dish. Add cornbread or tortilla chips for extra crunch.
Ingredients:
1 15 oz an spicy chili eans in sauce, undrained
1 15 oz can pinto beans, undrained
1 15 oz can dark red kidney beans, DRAINED
1 14 oz can chili- style chunky tomatoes, undrained
1 large onion, chopped to 1 cup
2 - 3 tsp chili powder
dash red pepper to taste, other hot seasoning to taste
Procedure:
- Mix all ingredients in the slow cooker.
- Cover and cook on low heat setting 5 - 6 hours until flavors are well blended. Taste and season to your liking as mixture cooks.
Serve over brown rice or even pasta. Add a dash of fresh squeezed lime into 1 cup of sour cream and top the chili in your bowl; sprinkle the chili with fresh cilantro for a burst of fresh pepper spice. Garnish further with green onions. Let your imagination rule. Sharp cheddar is even better!

Beefy Chili in the Cooker:
Ingredients:
2 lb ground beef
1 large onion chopped
2 cloves garlic, minced
1 can 28 oz diced tomatoes, undrained
1 can 15 oz tomato sauce
2 tbls chili powder
1 1/2 tsp ground cumin
1/2 tsp salt or salt substitute
1/2 tsp pepper (red pepper flakes if you dare)
1 can 15 oz kidney or pinto beans, rinsed and drained (really improves the flavor!)
Procedure:
- Brown beef, drain, and set aside.
- Mix beef and remaining ingredients except beans (they get too soft and break apart) Place in slow cooker.
- Cover and cook on low heat for 6 - 8 hours until flavors are blended and onion is transparent in color.
- Stir in beans and cook on high heat setting for 15 - 20 minutes until slightly thickened.
For extra fun, serve chili in bread bowls (round bread you have removed most of the center). Great served over noodles, rice, cornbread, or crackers. All kinds of toppings add spunk and spice. Think of corn relish, pepper relish, chow chow, corn chips, etc.
Draining your beef helps reduce fat, try ground steak for even less fat. However, some fat is needed in the meat for flavor. For extra heat, mix half the meat with spicy sausage instead of all beef.

Great Hub, if you are tired of beans, use chick peas as well as chunks of sweet potatos, a good substitute as they do have a good texture as well as flavour.
