If you’re trying to come up with some fast and easy vegetarian recipes, you may be tempted to get away with making some mac and cheese or dialing up your local pizza shop and having them deliver a cheese pizza to your door. Luckily, there are actually a huge number of fast and easy vegetarian recipes you can whip up at home in just a few minutes. If you have a decently stocked cupboard and a little bit of creativity, you have a huge number of choices of what you can cook in a short amount of time.
First, if you have potatoes, you have a lot of healthy options for fast and easy vegetarian recipes. Use your potatoes to create a meal of delicious, healthy, one-of-a-kind baked potatoes. Take your baked potatoes, and top them with whatever suits your taste of the day—shredded cheese, fresh (or even frozen) broccoli, salsa, beans, and even vegetarian chili. If you want to make this recipe fast, just stick the potatoes in the microwave for a few minutes. If you want to make them a little crispy or brown on top, once you take them out of the microwave, put them under your oven broiler for a couple of minutes.
Another fast and easy option is pasta topped with fresh, steamed vegetables. There are some great options on the market these days for whole wheat pasta that is also fortified with vitamins and protein. They take a few minutes longer to boil than white flour pasta, but the health benefits for you are worth the wait. And, while you’re waiting, you’ll have time to prepare the vegetables that pair with the pasta. Again, choose vegetables that you like, but don’t be afraid to expand your pallet and try some new ones. Some great, healthy choices are broccoli, diced butternut squash, diced sweet potatoes, and cauliflower. If you don’t want to take the time to prepare all the vegetables yourself, you can use a bag of frozen mixed vegetables instead of fresh. If you want to add a little bite to your dish, you can add a spoonful or two of Asian Chili Paste to your vegetables after they are steamed. Once the pasta is cooked to your liking, toss with some olive oil and fresh, minced garlic, and top with whatever vegetables you steamed while the pasta was cooking.
A third option for fast and easy vegetarian recipes is cooking with a few eggs. You can scramble them and add cheese and salsa to the skillet once they are finished, for a delicious, filling, and healthy meal. You can also quickly whip up an omelet and fill it with your choice of cheese, diced red or green peppers, sliced mushrooms, and diced onions. Serve either of these with a side of fresh fruit—melon, berries, sliced oranges—and you have a complete meal full of protein and another natural foods that will give you a lot of energy and not take much time for you to whip up.
The best thing about all of these quick and easy vegetarian recipes is that they’re all customizable depending on your tastes and what you happen to have in your house when you want to start dinner.
