Fast and Quick Lunch Recipe

If you are looking for some fast and quick lunch ideas, I have some that will fit the bill. People are too busy and do not have the time to spend all day in the kitchen and if they are in the kitchen they want to start eating. It seems like the healthy foods need preparation. So planning is probably the best way of approaching it.

Decide what you want to take to lunch the sunday before the week starts

Prepare a lunch menu, to take with you when you go shopping for groceries

Pick up items that are easily assembled and blended

Keep it simple and tasty

Here are some delicious snacks to try for lunch;

Not Tuna Pat'e

1/2 soaked raw sunflower seeds

1/4 cup soaked raw almonds

2 tablespoons water

11/2 tablespoon minced onion

1tablespoon minced fresh parsley

1 tablespoon fresh lemon juice

1/4 teaspoon salt

Place the sunflower seeds, almonds and water in a food processor and blend into a paste. Scrape sides of bowl with rubber spatula, put in mixing bowl and stir in celery, onion, parsley, lemon juice and salt. Mix well.

Serve as a dip, or as a filling in a stuffed bell pepper, or use it on rye bread for a tasty sandwich.

Zucchini Hummus

1 zucchini, peeled and chopped

2 tablespoons raw tahini

1/2 teaspoon crushed garlic clove

1/4 teaspoon ground cumin

1/4 teaspoon paprika

1/4 teaspoon salt

Place all ingredients in a food processor, blend until smooth, serve with a salad, or as a spread on your favorite crackers, wheat thins or wry crisps.

Spinach Apple Soup

2 cups spinach leaves, tightly packed

1/2 apple, peeled and chopped

1/2 cup water

1 teaspoon fresh lemon juice

1/2 avocado chopped

Place the spinach, apple, water, lemon juice in a blender and process until smooth, serve with baked potatoe topped with basil and cayenne pepper.

These light treats will make any lunch pop.
