When reducing your calories and living a healthier lifestyle is your choice it is often hard to give up the little pleasures like cheesecake. This recipe will show you how you can combine taste and nutrition in a flavourful way.

A typical cheesecake recipe contains a whopping 588 calories and 43g of fat. This is one recipe you can feel good about indulging in. A serving is only 214 calories and is fat free!


Ingredients

  • 4 cups yogurt cheese (see my low sodium dilly dip recipe to learn how to make yogurt cheese)
  • 1 recipe Fat Free Pie Crust
  • 2/3 cup honey
  • 1/3 cup frozen apple juice concentrate (defrosted)
  • 2 teaspoons vanilla
  • 3/4 teaspoon lemon extract
  • 1/4 cup whole wheat pastry flour
  • 3 tablspoons arrowroot
  • 5 egg whites

Directions

  1. Prepare crust for a 9 inch non-stick springform pan. Chill while preparing filling.
  2. Preheat oven to 300 degrees F.
  3. For filling, in a large bowl, with electric mixer on high, beat yogurt chees, honey, vanilla and lemon extracts, flour, arrowroot and eggwhites until thoroughly blended.
  4. Pour filling into prepared crust.
  5. Bake for 60-70 minutes until done. Cheesecake is done when center appears set but still jiggles slightly when lightly shaken.
  6. Remove cheesecake from oven and loosen edges with knife to prevent cracking. Cool on wire rack for 1 hour and then refrigerate for 6 hours or until chilled and set.

Yield: 12 servings

Note: you may wish to top with Fat Free Fresh Fruit Topping (1 C fresh or frozen fruit mixed with 2 1/2 tablespoons honey and 1/2 cup plain nonfat yogurt)

You could use cream cheese...but then it won't be fat free. If you try the yogurt cheese you may just be surprised.
