Microvave Sweet and Sour Pork

I have been giving several favorite meat dishes for those family and friend get-togethers. This sweet and sour pork recipe will be a hit @ church homecomings and reunions as well. This is one of the church folks’ recipes which I have gotten over the years. It is delicious served over rice! Give it a try and let me know!

Ingredients


  • 2 tbsp. brown sugar
  • 2 Tbsp. cornstarch
  • 1 (8 01.) can pineapple chunks (reserve juice)
  • 1/4 C. Teriyaki sauce
  • 3 Tbsp, cider vinegar
  • 1 1/2 tsp. catsup
  • 1 lb. boneless pork shoulder, cut into 3/4-inch cubes
  • 2 medium green peppers cut into 3/4-inch chunks

Directions

Mix brown sugar and cornstarch in 2 quart casserole. Blend in pineapple juice teriyaki sauce, vinegar and catsup. Stir in pork and pepper, cover and microwave at High for 5 minutes. Stir in pineapple chunks. Cover and microwave at medium until pork is cooked and sauce is thickened (12 to 15 minutes stirring once). Serve over rice. (Recipe by Mrs. Betty J. Holt)
