Tocino

Tocino, locally known as tosino, is a cured meat product native to the Philippines. Usually, pork is used to create this fantastic dish although beef is sometimes used. It is usually recognized as a form of ham or bacon. It got its name from the Spanish word tocino, which means cured meat. Filipinos usually have tocino for breakfast with is usually accompanied by with fried eggs and fried rice.


For those who have adventurous taste buds, here is a simple recipe you can use to create this Filipino dish.


Tocino Recipe

Ingredients:

  • 1 kilogram pork or beef, lean
  • 2 tablespoons salt
  • 1/4 teaspoon prague powder
  • 1/2 teaspoon garlic powder
  • 5 tablespoons sugar
  • 1 tablespoons rum or gin or any white wine

Utensils:
Knife, chopping board, mixing bow, plastic wraps

Procedure:
1. Wash and slice (approximately 1/4 inch thick) pork or beef
2. Mix salt, sugar, prague powder, garlic powder and wine in the bowl. Then, rub meat on both sides.
3. Mix the rest of the ingredients and aim for even distribution. Apply on both sides of each slice.
4. Place the meat slices on a bowl and make sure to cover it. Make sure to marinade the mixture for 24-72 hours.
5. If needed, seal in plastic wraps then store inside the refrigerator (Shelf life in cold storage is up to 5 months)

Quite easy, isn’t it? Just like any cured meat products, tocino does not spoil easily, and can be stored for a prolonged duration.

what if theres no prague powder in making tocino ?
