How To Make Sweet Rice or Bico (A Filipino Recipe)

Rice is a part of an important diet to a lot of people all over the world. In fact, it is considered a staple food for filipinos, other asian countries, middle eastern countries and even in Latin America. Some people thought it only contains carbohydrates but no, rice also has other nutrients like protein and others. Here is a list of its nutritional value:

There are many types of rice and one of them is the sweet rice or glutinous rice. Some people also call this as sticky rice, waxy rice or pearl rice. It is a type of short grained asian rice that is especially sticky when cooked. It is grown in China, Japan, Vietnam, Laos and even in the Philippines. Glutinous rice does not contain gluten and thus should be safe for gluten-free diets. Gluten is usually found in wheat, rye and barley. So to all diet conscious out there don't forget to eat your fair share of rice.

Rice containing these added proteins can be used as component in oral rehydration solutions which are used to treat diarrheal diseases, thereby shortening their duration and reducing recurrence. Such supplements may also help reverse anemia.
Japanese and Koreans make rice cakes from glutinous rice. The Chinese make a dish called nuomi fan from glutinous rice, sausage, barbecue and mushrooms.
In the Philippines, glutinous rice is called malagkit for the tagalogs and pilit for the visayans which literally means "sticky". One of the popular desserts or snacks made with glutinous rice is bico.
I have made a my own variation of cooking bico. Try this healthy and delicious dessert.
It is simple and easy recipe for you to make.
Cooking and Preparation Time: 20-30 minutes
Ingredients:
2 cups sweet rice
2 cups water
1 can coconut milk
1 1/2 cup brown sugar
a small piece of ginger chopped and pounded
1/4 cup young shredded coconut
Cooking Instructions:
1. Rinse sweet rice and put 2 cups of water. Steam/boil for 15-20 minutes
cooked.
2. Mix ginger to the sweet rice. Set aside when cooked.
3. In a pan, place coconut milk and 1 1/2 cup brown sugar until brown.
4. Cook over low heat until it becomes sticky.
5. Separate half a cup for the toppings.
6. Mix the shredded young coconut to the remaining coconut milk with brown
sugar.
7.Then mix the sweet rice.
8. Transfer it to the bowl or any dish then place the toppings.
Now its ready to serve. Enjoy!

Yes, Elizabeth it is yummy. There are some people who don't like it to be that sweet so you can always adjust the amount of sugar you put in it. Then it will good enough for you.;-)
