Ingredients :

  • 1 kilo lean ground pork
  • ½ cup tomato sauce
  • 3 tbsp vinegar
  • 1 small head garlic, crushed
  • ½ cup white sugar
  • 1 tsp black pepper
  • 2-1/2 tsp rock salt
  • 2 tsp hot sauce
  • 2 tbsp soy sauce

Procedure :

  1. Mix all ingredients well. Refrigerate forat least 2 hours.
  2. Place every 2 tbsp of mixture on a was paper or clean plastic. Roll to form longganiza shape
  3. Remove paper or plastic and fry desired number of longganiza pieces in hot oil until brown.

Store the rest in freezer. Makes 36 servings.

That sounds great. Looks a lot different form the Mexican longanizina, which is similar to a chorizo.
