Buko Chopsuey
Ingredients :
- 1 medium carrot, cut into strips (1 cup)
- ¾ cup snow peas (75 g)
- 1 medium head pechay (100 g), coarsely sliced
- 6 cloves garlic, minced
- 4 stalks green onions, sliced
- 20 medium shrimps (1/4 k.), shells removed
- 2 squares tofu, fried and cut into cubes
- ¼ cup tomato sauce
- 1 buko(coconut)
- meat cut into 1-1/2" x ¼" strips
Procedure :
- Stir fry carrots, snow peas and pechay in 1 tbsp. oil until snow peas is cooked. Set aside.
- Saute garlic and green onions in a little oil. Add shrimps, tofu, tomato sauce and shrimp juice. Season with 1 tbsp. soy sauce and ½ tbsp. fish sauce. Simmer for 3 minutes.
- Add buko(young coconut) and continue simmering for 2 minutes. Stir vegetables and simmer once.
Makes 6 servings.
