Filipino Recipe Chicken Adobo Aloha

Ingredients :
- 700 grams chicken, cut into serving portions
- 100 grams chicken livers
- 1 can (234 g) pineapple chunks drained (reserve syrup)
- 12 cloves garlic, crushed and fried (optional for garnish)
- 1 medium onion, chopped
Marinade :
- 6 cloves garlic, crushed
- ¼ cup vinegar
- 1 tbsp soy sauce
- 1 tbsp rock salt
- ½ tsp crushed peppercorns
- reserve pineapple chunksyrup
Procedure :
- Marinate chicken pieces and livers for 1 hour. Simmer in marinade for 5 minutes. Drain and reserve marinade. Set aside livers.
- Fry chicken pieces in oil until golden brown. Add marinade.
- Using mortar and pestle, pound chicken livers into smooth paste. Pour in ½ cup water then add to chicken. Blend. Simmer until chicken is tender.
Makes 6 servings. You can also use pork in this recipe.
