Filipino Recipe Chicken Adobo Aloha

Ingredients :

  • 700 grams chicken, cut into serving portions
  • 100 grams chicken livers
  • 1 can (234 g) pineapple chunks drained (reserve syrup)
  • 12 cloves garlic, crushed and fried (optional for garnish)
  • 1 medium onion, chopped

Marinade :

  • 6 cloves garlic, crushed
  • ¼ cup vinegar
  • 1 tbsp soy sauce
  • 1 tbsp rock salt
  • ½ tsp crushed peppercorns
  • reserve pineapple chunksyrup

Procedure :

  1. Marinate chicken pieces and livers for 1 hour. Simmer in marinade for 5 minutes. Drain and reserve marinade. Set aside livers.
  2. Fry chicken pieces in oil until golden brown. Add marinade.
  3. Using mortar and pestle, pound chicken livers into smooth paste. Pour in ½ cup water then add to chicken. Blend. Simmer until chicken is tender.

Makes 6 servings. You can also use pork in this recipe.
