Egg Sarciado

Ingredients :
- 12 hard-boiled eggs, shells removed
- 4 cloves garlic, crushed
- 1 medium onion, chopped
- 5 medium size tomato, pureed
- 3 cups meat broth
- ½ cup cooked green peas
- 2 medium red bell peppers, cut into cubes
- 2 eggs lightly beaten
Procedure :
- Slice cooked eggs lengthwise into two. Set aside.
- Saute garlic and onions in oil. Add the pureed tomato, meat broth and green peas. Season with 1 tbsp.soy sauce, 1-1/2 tsp rock salt and ½ tsp. pepper. Simmer for 5 minutes.
- Add hard boiled eggs, bell peppers and beated eggs.Simmer, stirr constantly for 2 minutes, or until cooked
Makes 8 servings.
Fried Fish and/or fried tofu can be used instead of hard-boiled eggs. And ¼ kilo fresh tomatoes can be used instead of canned tomato sauce.
