Fish with Creamy Tomato Pepper Sauce
Ingredients:
Choice of fish (de-boned)
3 tbsp Butter
1 tbsp Garlic (chopped)
½ tbsp Red pepper flakes
3 pc Red tomatoes (chopped)
2 tbsp Cornstarch
¼ cup Parmesan (or Cheddar) cheese (grated)
¼ cup Water
Carrots (fried)
Directions:
- Heat butter in a skillet.
- Sautee garlic on butter.
- Add red pepper flakes (add more if you want more spice).
- Add tomatoes and water. Simmer for 5 minutes.
- Add cornstarch. Make sure it's dissolve in sauce thoroughly.
- Add fish. Cook in sauce for at least 15 minutes.
- Top with grated parmesan just before turning of the fire.
- Serve with fried carrots.
Fried Carrots:
- Heat vegetables in pan.
- Sprinkle with ground black pepper and salt.
- Add carrots. Fry for 2 minutes.
*NOTES: This creamy pepper sauce works nice with any other kind of sea food.
