The Story Behind the Recipe:

I originally got this this recipe from my aunt's collection of recipes, hand-written on small index cards. I loved how basic, simple, and easy this recipe is. Plus, it is really yummy. However, as I've learned more about health and nutrition, I decided that I needed to make this recipe healthier. Below, you will find the original version of the recipe and the revised version. I think both taste wonderful, but the revised version is healthier!

Each cake makes 8 servings.


The Revised Recipe

Ingredients:

  • 2 cups diced apples (or pears or combo)

  • 1/2 cup raw sugar

  • 1 cup whole wheat flour

  • ¾ tsp. baking soda

  • ½ tsp. salt

  • 1-1/2 tsp. cinnamon

  • 1 egg

  • ½ cup applesauce

  • 1tsp. vanilla

    Directions:

    Preheat oven to 375. Grease a 9" or 10" round pan with a non-stick cooking spray if needed.

    Sprinkle diced apples with the sugar, set aside.

    In a small bowl, mix the flour, baking soda, salt, and cinnamon. In another bowl, beat the egg. Mix in the apple sauce and vanilla. Stir the flour mixture into the egg mixture, until well mixed. Add apples.

    Bake for 35 minutes.

  • The Original Recipe

    Ingredients:

    • 1 cup flour

    • ¾ tsp. baking soda

    • ½ tsp. salt

    • 1-1/2 tsp. cinnamon

    • 1 egg

    • ½ cup oil

    • 1tsp. vanilla

    Directions:

    Preheat oven to 375. Grease a 9" or 10" round pan with oil or butter.

    Sprinkle diced apples with the sugar, set aside.

    In a small bowl, mix the flour, baking soda, salt, and cinnamon.

    In another bowl, beat the egg. Mix in the oil and vanilla. Stir the flour mixture into the egg mixture, until well mixed. Add apples.

    Spread batter into prepared pan.

    Bake for 35 minutes.

    These values aren't exact because you may use different brands than those calculated here. The information will vary depending on the kind of flour, applesauce (sweetened/unsweetened), sugar, etc., you use.

    I made this recipe yesterday, but didn't realize my apple sauce wasn't any good until after I had started it. I didn't want to use oil, so I scrounged through my pantry. I found a jar of my grandma's apple butter, so I thought I would give that a shot as an oil substitute: it worked! I probably could have put less sugar and cinnamon into the batter, but it turned out really yummy and moist.

    sounds very good I also have a Fresh Apple Cake maby you would like to try.

    2 cups splenda or sugar

    4 cups apples chopped

    1 1/2 cup oil you can sub 1 cup applesauce and 1/2 cup oil

    2 eggs beaten

    3 cups flour

    1 1/2 tsp vanilla

    1 tsp. salt

    1 1/2 tsp soda

    1 cup chopped nuts

    Cream sugar,eggs,and oil, add flour,salt.soda,vanilla,and chopped nuts,mix well,Fold in chopped Apples.Bake for 55 min in a 9 inch by 13.pan

    Frosting

    1/2 cup walnuts 1/2 cup coconut

    10 tablespoons brown sugar

    5 tablespoons canned milk

    5 tablespoons margarine (Melted)

    Bring to a boil about 2 min. put on cake when you take it out of the oven.

    Thanks for sharing, Patricia. That recipe calls for a lot of sugar. I also do not recommend using margarine. I think your recipe could use a healthy makeover.

    Wow! Great recipe. I had to read your makeover twice--you used applesauce instead of oil, which will help keep your cake moist. I can hardly wait to make this--any suggestions on what kind of apples you prefer? Do you peel your apples? Minnow

    I peel my apples if I feel like it. So it is up to you. I like it either way, but it is more "finished" if you peel the apples. I tend to use any red apples that I get at the local fruit stand. Living in Washington state leaves me with a ton of apple options at the market. Sometimes I'll make this cake if we buy more apples than we can actually eat. Before they go bad (or the fruit flies eat them) I'll use them in the cake. It's good with pears too.

    Oh that looks yummy. I love to get my hands on good/healthy recipies. I try to have the kids help out in the kitchen as much as possible because eating the finished results make them feel so accomplished. They are such honeys. We're making this tonight.

    The original recipe sounds great, but I have never had much luck substituting applesauce for fat in recipes. I might give it a try though since this is apple cake!
