Fried crescentine (Emilia Romagna, Italy, recipe)

A delicious, tasty and easy-to-make appetizer to open your dinner.
Ingredients (4 people):
- 1 lb all-purpose flour
- 1 ½ oz lard
- 1 ½ oz fresh yeast
- 1 pinch baking soda
- milk
- salt
Preparation:
Mix all the ingredients with warm milk and allow the dough to rise for about one hour at room temperature, covered.
Roll out the dough until roughly 0.2 inch thick.
Cut into diamonds and deep-fry in lard (or in oil). When they swell and brown, remove them from heat and let dry in roll paper.
Serve hot to accompany cured meats, prosciutto di parma, salami and soft cheese. Crescentine are delicious when accompanied with sliced sausage, prosciutto, soft or stracchino cheese right before serving, or with pickled baby onions...
