Friend or Fowl?: Bean Soup with Chicken Meatballs

 This is a recipe for simple bean soup with chicken meatballs.

Ingredients:

  • 3 cups pinto beans, cooked and refrigerated
  • 4 chicken meatballs, thawed
  • Chicken broth
  • 2 Tbs. Butter
  • Salt
  • Pepper

Directions:

  1. In a saucepan, heat butter.
  2. Add salt and pepper to melted butter.
  3. Pour beans into the pan.
  4. Cover with chicken broth.
  5. Heat for 10 minutes.
  6. Cut chicken meatballs into bite-sized pieces.
  7. Add meatballs to soup and let simmer for 20 minutes.
  8. Serve with gluten free crackers.
