Fruit Salad Salsa with Cinnamon Tortilla Chips

One of my son's favorite CDs is by Laurie Berkner and has a song on it called "Fruit Salad Salsa." If you are the parent of a preschooler, you have no doubt heard it! With all the amazing fruits currently in season, I thought it would be fun to make my own fruit salad salsa. While it is a bit labor-intensive chopping and quartering all the fruit, the small little bites really are what make this a salsa instead of your everyday fruit salad. I also made quick cinnamon sugar tortilla chips to go with it, though if you want to skip that step cinnamon graham cracker sticks would serve as an equally good dipping tool.

Fruit Salad Salsa with Cinnamon Tortilla Chips

1/2 cup green grapes, quartered

1 kiwifruit, diced

2-3 large strawberries, diced

1/2 cup diced watermelon

1/2 cup blueberries, halved

1 8 oz. can of crushed pineapple

2 flour tortillas

nonstick cooking spray

cinnamon sugar

Pre-heat oven to 350 degrees. In a medium bowl, combine the grapes, kiwifruit, strawberries, watermelon, blueberries, and crushed pineapple. Gently combine and let sit. Stack tortillas on a cutting board and with a pizza cutter, cut the tortillas first in half and then into strips approximately 1-inch thick. Arrange tortilla strips on a baking sheet and spray with nonstick cooking spray. Sprinkle cinnamon sugar over the tortillas. Bake for approx. 10 min. Remove from oven and cool before eating. If your fruit salad salsa is too watery, simply drain some of the liquid out.

Although I came up with this recipe with my five-year-old in mind, I think kids of all ages will enjoy it! I also think it would make an elegant and surprising appetizer for any kind of outdoor party. It would be a lovely addition to for a bridal or baby shower or brunch buffet.
