I think that this is a pretty unique way to cook ribs - I've never seen them cooked like this anywhere... The taste of pork goes really well with the fruit and the meat just falls off the bone...
My wife hales from Thailand and is something of a wiz in the kitchen - this is one of her concotions - so if you don't like it, don't blame me. (but I can't imagine anyone not liking this.
You need pineapple and orange juice in this recipe. Freshly squeezed is better, but you can use boxed if time is an issue.
What you'll need
about a pound of spare ribsplain flour
pint of orange juice
pint of pineapple juice
salt
sugar
soy sauce
what you need to do:
You have to deep fry the ribs - so heat some oil to about 180 degrees centigrade. While you're waiting for the oil to heat up dip the ribs in the flour. You need to fry the ribs until they are cooked through - they should go a light golden-brown in the process.
Put all remaining ingredient in a pan, if you happen to have any pulp left over then throw that in too. You need to bring it to bowl over a low heat. Keep stirring now and again - this has a high sugar content and will be inclined to stick to the bottom.
As you boil the ribs then you'll notice that the juices are sticking to the ribs, so keep boiling until the mixture is nice and thick. Fish out the ribs and they are ready to serve.
This is one of the best thing that my wife cooks, but she doesn't make it enough!! Think I'll see if I can sweet talk her into making it sometime this week!
