Garlic Lover's Guacamole

Well my husband Chad and I love two things when it comes to eating, the first is eating often and the second is garlic! So, we try to have some go to healthy snacks that we really enjoy and that we won't feel guilty about.
One of our absolute favorites is guacamole (and Chad doesn't even like avocado!) We prefer to make it from scratch because we can control exactly what and how much of everything goes into it. We love fresh garlic and it is good for you so we add it to our guacamole and it actually makes it spicy which we love!
What You Need To Get Started
Things You Will Need:
2-3 RIPE avocados (they must be ripe)
1 small red onion, diced (more or less depending on how much you like onion)
1 small tomato, diced (optional, if you don't like tomato)
3-5 cloves of garlic, chopped (more or less depending on how spicy you want it)
1 small lime
Black pepper (to taste)
Pinch of salt
You will notice that I don't use cilantro in my recipe as Chad doesn't like it and I don't use peppers either as we get the heat from the garlic. You can certainly modify this recipe to your own tastes and add or take things out.
Let's Put It All Together
First, cut the avocados open, pull out the pits and then spoon out the flesh into a bowl. You can use the back of a fork to begin to mash up the avocado while squeezing some fresh lime juice over it. Add just enough lime juice at first to assist in mashing the avocado, you can add more later to taste. Then, just begin adding the rest of the ingredients in any order you like. I would recommend going easy on the garlic, add it slowly until you've reached the desired level of spiciness you are looking for.
We like to eat our guacamole with baked pita chips, but there are many great things to enjoy it with. If you are really trying to be healthy, you could take some Bibb lettuce and make a lettuce wrap with the guacamole. You could also use this recipe to go alongside homemade Mexican dishes!
