Let’s eat is a fun series of easy recipes- using handy ingredients.

My recipes are really easy because I love great food- but I’m busy.

… and you can do lots of substituting and still have a great meal.




Shrimp fresh or frozen

Black beans canned, frozen or dry

Garlic fresh, bottled

Onion

Jalapeño

Salt, pepper


Options guacamole, tortillas, chicken, sour cream, a squirt of lime and what’s in your fridge?



Easy directions just follow along!


  1. I like using dried black beans- so I followed the cooking instructions on the bag.
  2. Once the beans were soft, I drained most of the water. I didn’t want soggy or dry beans.
  3. I minced up the onion, jalapeño, and garlic, and sautéed them. Once cooked I mixed this into the beans- I stirred the mix, covered it and left it alone to become tasty friends.
  4. 2 hours later- I wanted the shrimp. I sautéed the onion, garlic and added the whole bag of frozen shrimp…. I want leftovers.
  5. I am cooking chicken because the shrimp is gone…. and it was GOOOD!


I added guacamole and flour tortillas for my meal.

My inspiration is I’m tired of my own cooking, so I’m letting my creative side play.
