Garlic Mashed Potatoes

This recipe for garlic mashed potatoes really cranks up the flavor of a traditional recipe by adding garlic and finely chopped green onions.

Ingredients

2 1/4 lb. baking potatoes or Yukon Gold potatoes

4 cups low-sodium, fat-free chicken broth

3 cloves garlic, crushed

1/4 cup reduced-fat (1%) milk or buttermilk, warmed

4 large green onions, trimmed and finely chopped

1 teaspoon salt

1/4 teaspoon freshly ground black pepper

Directions

  1. Peel the potatoes and cut into 1 1/2 inch pieces.
  2. Place the potatoes in a large pot.
  3. Add the chicken broth and garlic and enough cold water to cover the potatoes.
  4. Bring to a boil and cook until the potatoes are tender, 10 - 12 minutes.
  5. Drain the potatoes, reserving about 1/2 cup of the cooking liquid.
  6. Return the potatoes to the pot and add the milk.
  7. Mash the potatoes well with a potato masher, adding the reserved cooking liquid as necessary, until the potatoes are smooth and fluffy.
  8. Mix in the onions, salt and pepper; serve hot.
