If you enjoy the flavor of gingerbread cookies, you'll like this gingerbread cake

Moist gingerbread cake, iced with cream cheese or butter icing. What a flavor combination!

Recipe for Gingerbread Cake

1 cup flour

1/2 tsp. cinnamon

1/4 tsp. ginger

1/4 tsp. allspice

1 tsp. baking soda

1/4 tsp. salt

Mix together in bowl. Set aside.

In another bowl:

1/2 cup oil

1/2 cup sugar

1/2 cup molasses

2 eggs

(1/2 cup of boiling water)

Method for Making Gingerbread Cake:

Add dry ingredients to wet ingredients and then add the boiling water. Bake in a greased cake pan at 325 for approximately 30-40 minutes or until done.

Gingerbread cake recipe can be doubled for a larger cake.

Serving Suggestions for Gingerbread Cake

  • Serve gingerbread cake with whipped cream
  • Ice cake with cream cheese or butter icing

  • Serve warm from the oven with a dollop of vanilla ice cream
  • Serve gingerbread cake with custard

My Butter Icing

  • Soft butter, start with 1/2 cup
  • Beat with beaters, then add a splash of milk or cream (1-3 tbsp.)
  • Add in icing sugar and keep beating until smooth
  • Taste. Adjust amounts of sugar depending on whether you like buttery or sweet tasting icing
  • Add vanilla, if desired
  • For a softer icing add more liquid, for a stiffer icing use less

Hi Vondre,

I used to take this cake to potlucks and people always requested the recipe because it's a little different from the usual cakes.
