I've been living gluten free for the past couple of years, and have collected many recipes, tips and products that make gluten free living a bit easier.

The thing I miss most is baking with regular flour, so I've adapted some family recipes to use gluten free all purpose flour mix. Some recipes turn out almost like the original, some aren't so good, and other recipes are different than the original, but good in their own, new way.


Quick Coffee Cake

Here's a quick cake that's dense and chewy, with a nice cinnamon topping. If you're not on a gluten free diet, you can use regular all purpose flour, instead of gluten free all purpose flour.

Gluten Free Quick Coffee Cake

  • 2 cups gluten free all purpose flour
  • 3/4 tsp salt
  • 2 tsp baking powder
  • 1/2 cup white sugar
  • 1/4 cup canola oil
  • 1 slightly beaten egg
  • 3/4 cup milk

Topping

  • 2 tbsp gluten free all purpose flour
  • 1 tsp cinnamon
  • 4 tbsp sugar
  • 2 tbsp butter
  1. Sift dry ingredients together.
  2. Blend in oil.
  3. Combine egg and milk and add. Stir only until all flour is dampened.
  4. Spread in greased 8x8x2" pan.
  5. Sprinkle with mixed topping.
  6. Bake at 400°F for 25-30 minutes.

This is best when served warm.
