Wheat-Free Spaghetti, “Ricesketti”

This is one of our son’s favorite meals. But when trying to limit foods from one’s diet can be difficult, especially when it is a favorite. This is a great alternative to the traditional Spaghetti dish, we like to call it “Ricesketti”. Instead of using spaghetti though we replace it with rice, hence the name “Ricesketti”. This way it is Gluten-Free and still delicious.

 

I do have to admit that trying these Gluten-Free, Egg-Free, Dairy-Free, & Peanut-Free foods takes some getting use to. But when it comes through the love and well being of your family member, you are willing to do anything for them to alternate the foods they like. It’s still really hard to alternate some foods, but our children are worth trying until we can find an alternative for each and every one of their favorites.

Ingredients:

2lbs. Of ground beef, ground turkey, or ground chicken

(the choice is yours, we prefer beef, but have tried all of them)

1 green pepper chopped finely

1 small white onion chopped

1 4oz. Can of olives drained and chopped finely

1 cup of uncooked rice

Amount of water needed to cook the rice according to the directions on the package.

2 cans or jars of spaghetti sauce

2tbsp. Of sugar

Salt & pepper to flavor the meat

Directions:

In a frying pan, brown the ground meat and strain it, chop your pepper, onion, and olives, toss in with the meat and let cook about 5 minutes more. In a sauce pan cook rice according to the directions on the rice package. Once the meat and veggies are done add the sauce and the sugar to the meat. Once the rice is also done add it to the meat and sauce mixture, mixing it really well. And your done. You have my families special gluten-free “Ricesketti”.
