Good Southern Baked Macaroni & Cheese

 This is a favorite among my family when I cook.  The kids love it and the adults, which is a major plus when we all get together.

2 tbsp. Cornstarch

1 tsp. Salt

1/2 tsp. Dry Mustard

1/4 tsp. Black Pepper

2 1/2 cups Milk ( I like whole milk for the kids, but you could use skim for adults)

2 tbsp. Butter

2 Cups Sharp Chedder Cheese ( If you like spicing things up subsitute 1 cup for Pepper Jack Cheese, it is really good.)

2 cups of dry Pasta

Cook pasta and set aside.  In a medium size sause pan combine first 4 ingredients, stir in milk and butter.  Bring to a boil over medium heat, let boil for 1 minute.  Stir constantly,during this process.  Remove from heat and stir in 1 1/2 cup cheese, and then add pasta.  Pour mixture inton a 2 quart casserole dish and sprinkle top with remaining cheese.  Bake uncovered at 375 for 25 minutes. Serves 8.
