Gourmet Mac & Cheese

The variations described below are very rich and high-calorie. I don't recommend it if you're dieting, and you certainly shouldn't eat this way on a regular basis.
Most of the guys I know, myself included, are pretty good cooks. Some are even professionals. But it's a known fact that if it weren't for fast food places, many men would starve. And then those who keep girlfriends (or wives!) just so they'll have someone to feed them. This hub offers simple, cheap ideas for making some very tasty meals. Hopefully this will spark interest for further ventures into the culinary world... and a bit more self-sufficiency.
I love those meal-in-a-box pasta & sauce dishes. Macaroni & Cheese and all those Helper meals: Hamburger, Tuna, Chicken. But the instructions on the box should read: "Here's the basics, do with it what you will," because if you make those meals following the directions, it's typically pretty bland.
A pasta & sauce dish is something you can be creative with and add almost anything to. Evaporated milk or half & half instead of regular milk will make a cheese sauce richer and creamier. Spices such as sweet basil and thyme will enhance the flavor. And the last thing you want to do is over cook the pasta. If the instructions say, for example, "boil 12 to 14 minutes" always go with the lower number.
A good way to season pasta is to add your spices and seasonings to the water while it's boiling, along with a tiny bit of oil so it doesn't stick together. And, if you're adding a frozen veggie (canned vegetables are too mushy and don't have much in the way of nutrients), add it to the boiling water for the same length of time as your pasta.
When I make Hamburger Helper, I substitute hamburger with sweet (or spicy, if you like it hot) Italian sausage. While it's simmering, I add frozen sweet baby peas, thyme, lemon pepper, a couple slices of cheese - usually Velveeta and Havarti Dill, about a tablespoon of sour cream and a little extra virgin olive oil. If you're a fan of cheese dishes, you'll love this. This same recipe (with or without meat or tuna) works great with Macaroni & Cheese.
Obviously, this is a very rich, high calorie dish. I don't recommend it if you're dieting.
Right about now, you might be wondering, "Do I even need the box?" No, not really. But I like the added flavor I get with those packets that come in the box.

CW, Since you like Vista, would you have any clue as to why my pretty new computer is freezing up all of the time (off and on internet - so has to be the computer? I defrag once a week and have cleaned out useless clutter.
Thanks for any help.'
Karen
Karen, thanks for the feedback. In my own defense, this meal is VERY rich and I don't eat it very often... even though I'm lucky that weight has never been a problem for me, and I get ALOT of exercise, I know enough not to eat this way on a regular basis... but I definitely do sometimes.
RE: Vista. One important question; Did you upgrade to Vista from, say, XP on your current computer, or did you buy the system with Vista already installed?
I read a recipe for Mac & Cheese that added Butternut squash soup to the cheese mixture and then went along with your normal recipe -- I tried it and what a wonderful way to sneak in an extra veggie...I bet you'd love it. Marisue very rich!!
Nutritional Value of Butternut Squash is ..."The good: This food is very low in Saturated Fat, Cholesterol and Sodium. It is also a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Calcium and Magnesium, and a very good source of Vitamin A, Vitamin C, Potassium and Manganese."
I hate to chop it tho...it's like a brick!! buy it already chopped is MUCH easier unless you have a machete
thanks for the recipe info....Marisue
Marisue, Thanks for the tip. You don't need to sell me on butternut squash. I love it. And what a cool idea to add the soup to mac & cheese. I'll definitely be trying it.
PS to marisue: Uh, Dorkus, you don't need to sign your name. There's a cute little picture of you, next to your name, already there.
Force of habit? ; )
Hi CW,
I purchased the computer with Vista already on it. I tried to clean out things again today. I think it is a bit better, but still is freezing up. On top of that I only have dialup internet, so I have daily frustration.
Hi Karen, take it in to Geek Squad, or whatever you have where you're at. You shouldn't be having these problems with a new computer, and upgrade to DSL if you can. If it's still under warranty you can take it back to whomever you bought it from and insist they fix it... for free.
I wish I could offer better fixits, but that's all I got.
Thanks CW.
Constant Walker, You are right, I'm in such a habit of putting that name in there...we don't see the obvious LOL OK CURED. signed, already named
I'm "LOLing... out loud."

Hi CW,
So, that's why my husband keeps me around, to feed him. I had long suspected that, bu now it's confirmed. LOL Non a chance, I'm very lucky to have someone who loves me unconditionally, that doesn't happen for many people.
And, I see that you feed and care for your dog's nutrition more than your own - just joking. Actually, it sounds pretty good. If you eat the pasta for breakfast, you will not put on the pounds.
