Grandmas Chicken Soup Recipe

Grandma s Chicken Soup is an age old remedy for Cold and tastes wonderful too. Here is a recipe my Mother learned from her mother and then passed it to me. So this Recipe truly is a Grandmothers Recipe as far as I am concerned and I absolutely love this one. Given are the Ingredients and Method of preparation of this wonderful soup.

Ingredients of Grandma s Chicken Soup

  • 4 cups of Chopped Young Chicken with Bones
  • 2 med. Onions quartered
  • 1 Cup Mashed Potatoes
  • 1 Cup Scraped Carrots
  • ½ tsp Pepper
  • 2 stalks celery cut into 2 inch pieces
  • 1 parsley sprig
  • 3 Cloves minced
  • 1 tsp minced Garlic
  • 1 Bay leaf
  • ¼ tsp Thyme
  • 1 Tsp Butter
  • Salt as required

Method of Preparation

Place the chicken pieces in a pot and cover with water. Bring to boil and then simmer for around 30 minutes. Remove form stove to discard the Skin and Bones. Now add onion, cloves, bay leaf, thyme, garlic and pepper and simmer for an hour. Meanwhile, melt butter in a thick bottomed pan and saute carrots, celery and parsley for 2-3 minutes. Add this to the soup along with the mashed potatoes and Salt. Mix thoroughly and Cook for some more time. Remove from Stove and allow cooling and then skim off the fat from the Grandma’s Chicken Soup before serving.

Well, I don't think I have proclaimed anywhere that I am a Vegetarian. I love Chicken and some variety in Fishes. I am not very fond of eggs.I do not eat Mutton, Beaf or any other non vegetarian stuff.
