Buy Happy Chickens

 

I prefer the white to the red wine for this recipe;

COQ AU VIN BLANC

Serves 4

YOU WILL NEED

4 Chicken Pieces

1 Large Onion (diced)

6oz Button Mushrooms

1/2 Bottle White Wine (your choice but I prefer dry)

10 fl oz Double Cream

2 Cloves Garlic (crushed)

Parsley (fresh or dried and add to your taste)

Salt & Pepper

Oil for frying

THIS IS WHAT YOU DO

Fry onions and garlic till soft and slightly coloured

Add chicken and fry skin side down till brown - remove from pan

Add mushrooms, cook till soft and season with salt and pepper

Add wine and boil for 3 mins

Add cream and parsley (if dried, if fresh add at the end)

Reduce to thicken and return chicken to pan

Simmer till tender - 30-40 mins approx

SPICY CHICKEN SKEWERS

Serves 4

YOU WILL NEED

4 Chicken Breasts (skinned)

1 Tsp Chilli powder }

2 Tsp Paprika } MIX TOGETHER

1 Tsp Cumin }

3 Garlic Cloves

10 fl oz Natural Yogurt

THIS IS WHAT YOU DO

Cut chicken into 1" cubes and put into shallow dish

Add spice mixture to yogurt and garlic, stir well

Pour over the chicken and cover, marinade in fridge for 2 hours and stir occasionally

If using wooden skewers, soak them in cold water for 30 mins to stop them burning

Put chicken onto skewers and save marinade to brush over chicken while cooking

Pre-heat grill and cook on high for 4 mins - reduce grill to medium heat and cook for further 4 - 6 mins, check to make sure they are cooked

Serve with rice or in Pitta Bread with salad

A couple of things to brighten up just plain old chicken ~

SWEET AND SOUR SAUCE

YOU WILL NEED

1 heaped Tblsp Brown Sugar}

2 fl oz Water or Pineapple Juice} MIX TOGETHER AND BOIL

2 fl oz Wine Vinegar}

1" Fresh Ginger}

1 Clove Garlic} FRY TOGETHER

1 Small Onion (chopped)}

I Small tin of Pineapple Chunks

THIS IS WHAT YOU DO

When you have boiled and fried - add together with the pineapple

Thicken with cornflour and pour over chicken

MANGO CHUTNEY

Serves 4

YOU WILL NEED

2 Mangoes (diced)

2 Tsp Veg Oil

1 Large Onion (sliced)

2 Tsp Paprika

6oz Brown Sugar

2 Pints water

THIS IS WHAT YOU DO

In a large pan, fry mango and onion together for 2 mins

Add rest of ingredients and cook on medium heat till reduced.
