Greek Style Roast Potatoes

 

These potatoes are a particular favourite with my sons especially with the recipe for Greek Style Roast Leg of Lamb in one of my other Hubs.

Serves 6

Preparation time 20 mins. Roast time 2 Hours

Ingredients

10 peeled potatoes

3 chicken stock cubes

½ cup olive oil

2 ½ cups water

2 tablespoons lemon juice

3 cloves crushed garlic

1 ½ teaspoons dried rosemary

1 ½ teaspoons dried thyme

Ground black pepper

 

Method

Preheat oven to 175C / 350F / Gas mark 3

Mix together the crumbled stock cubes, water, garlic, lemon juice, thyme, rosemary, garlic and black pepper to suit your taste.

Cut the potatoes into quarters, spread them evenly in a baking tin, and add the mixture making sure that all of the potatoes are well coated.

Cover with tin foil and bake for 2 hours or until tender but firm.
