Ingredients
1/2 kilo Chicken Breast (deboned)
1 tbsp Lemon jiuce
1 tsp Lemon Zest
1 tbsp Olive Oil
1 tbsp Oregano (fresh or dried)
2 cloves garlic (minced)
2 large cucumbers (seeded and coarsely chopped)
2 large tomatoes ( coarsely chopped)
1 small red onion (finely sliced)
2 bags mixed salad greens
1/4 cup pine nuts (coarsely chopped)
2 ounces feta cheese (crumble into small pieces)
1/2 cup pitted olives
1bottle low calorie salad dressing
salt and pepper to taste

Preparation
1. Place chicken in a shallow bowl
2. For the marinade, combine lemon juice,lemon zest,oregano,olive oil garlic and papper in a small bowl and pour over chicken
3.Refrigerate marinaded chicken for 2-3 hours, turning the pieces occasionally.
4. In a medium bowl, combine cucumber,tomatoes and onion and set aside.
5. After marination time is reached, drain chicken and discard the marinade.
6. In medium heat,grill each side of the chicken for 6 minutes or until tender.
7. When done,cut up chicken into bite size pieces, then toss with cucumber and salad green mixture.
8. Drizzle with salad dressing and sprinkle with feta cheese,olives and pine nuts.
9. Add Salt and pepper to taste
