Grilled Salmon With Thyme Herb

Ingredients:
- 450 g fresh salmon
- 2 tsp extra-virgin olive oil
- 2 tsp fresh lemon juice (lime)
- ΒΌ tsp salt
- Pinch freshly ground black pepper
- 2 cloves garlic, chopped finely
- 3tsp dried thyme herb
- Olive Oil Cooking Spray
- Capers
Procedure:
- Cut the fish into four equal potions. Combine olive oil, lemon juice, salt, pepper, garlic and thyme in a bowl and brush the mixture onto the fish. Spray the rack of a grill tray with olive cooking spray and place fish on it. Grill 10cm from the heat for 4-6 minutes per 1 cm of thickness. If the fish is more than 2.5cm thick, turn it halfway through grilling. When ready to serve, top the fish with capers.
- Serve the salmon with steamed broccoli, asparagus and carrots. This meal goes well with vegetable salad that consist of lettuce, tomatoes, cucumber, onion, and red cabbage with French Dressing and Creamy Carrot Soup.
