Ground Round Vegetarian Recipes

If ground beef is one of your favourite sources of meat but you have just made the switch to becoming a vegetarian, don't worry too much - there is still plenty of options for you to explore.

Ground round 'beef' is a perfect replacement for ground beef in many of your favourite recipes and will really help you meet your protein needs for the day as well as helping you reduce the total fat in your diet. Below are two great recipes for classic standbys that you can try that incorporate veggie ground round into them.


Veggie Chili

1 tbsp olive oil

1 ½ cups chopped red onions

1 cup each chopped celery, green pepper, red pepper and mushrooms

1 tsp garlic powder

12 oz. veggie ground round

1 ½ tbsp chilli powder

2 tsp ground cumin and dried oregano

1 tsp ground coriander

28 oz can of diced tomatoes

2 19 oz cans beans, drained and rinsed

14 oz tomato sauce

1 cup vegetable broth

1 tbsp sweetener

½ tsp salt

¼ tsp pepper

Begin by heating the olive oil in a large, non-stick pot over medium heat. Next add vegetables and garlic, stirring until they begin to soften (approximately 5 minutes).

Add in the ground round, chilli powder, cumin, oregano and coriander. Mix well and then continue to cook for 2 minutes. Next add in tomatoes, beans, tomato sauce, broth, sweetener, salt and pepper. Bring this mixture to a boil and then cover and let simmer over medium heat for about 20 minutes. Once done, remove this from heat and serve.

Bolognese Sauce

1 package veggie ground round

½ onion, diced

½ green pepper, diced

½ tbsp olive oil

1 clove of minced garlic

½ cup vegetable stock

1 tbsp Splenda sweetener

1 tsp basil

½ tsp oregano

½ tsp salt

¼ tsp black pepper

28 oz. can of plum tomatoes, pureed

1/3 cup tomato paste

First crumble the ground round into a bowl and then set aside. Next, in a saucepan over medium heat, sauté the onion and pepper with the olive oil and garlic. Once tender, add in the stock, sweetener, basil, oregano, salt and pepper and continue to cook for about 5 minutes. Next add in the tomatoes and tomato paste, stirring well. Bring this mixture to a boil and then reduce the heat and simmer for between 10 and 25 minutes depending on how rich you want the flavour to be. Lastly add in the ground round and stir until combined. Serve over noodles, rice, spaghetti squash or eat on it's own with stir-fried veggies for a perfect, lower carb meal.

So next time you are craving chilli or spaghetti, don't let this craving stop you from continuing on with your vegetarian diet. It is really quite simply to replace the ground beef with ground round in most of your recipes, plus it usually cuts down on cooking time as you will not need to cook the round beforehand like you do with beef. You can buy ground round in convenient size packages as well making it perfect for those who are single or just cooking for two.
