MIXED VEGETABLE VEGGIE WRAP

Getting children to eat wraps can be a task at best. It is important to note that in order to be able to pry your child from that chicken nugget and fries combo, you need to prepare something worthy of their approval.

Vegetables are son versatile and wraps can be a great way to make a healthy, tasty meal. You can eat the wraps with a side of potato chips. This recipe is easy to make, fast and most of all filling.

MEDLEY WRAP RECIPEIngredients:

4 flour tortillas

1 red bell pepper

1 green bell pepper (or other variety of your choice)

1/2 lb green beans

1/2 cup of lengthwise sliced Portabello Mushrooms

1 cup shredded carrots

1 cup diced yellow / green squash

Cheddar Cheese

Mustard

Mayonnaise(Optional)

Instructions

1. Cut the bell peppers lengthwise. Apply 1/2 teaspoon of olive oil on your skillet, that is all you need to sautee your bell peppers.

2. Throw in the peppers, portabello mushrooms and green beans stirring occassionally for 6 minutes uncovered.

3. Add a dash of salt, and add the squash. Then give your veggies one last flip for about 3 minutes before turning the heat off. Set aside while you prepare your flour tortillas.

4. You can use sliced cheddar cheese or shredded depending on your preference. Place the desired amount of cheese on each flour tortilla, and put in the microwave for 30 seconds. Spread the melted cheese over the whole tortilla, this will help hold all your veggies together.

5. Scoop some veggies unto the cheesed tortilla, drizzle some mustard, top with the shredded carrots and complete with a little mayonnaise. Rememeber, you do not need more than a teaspoon of mayo or mustard.

6. Fold your veggies on each end and secure with a toothpick and cut in half. Your wraps are now ready to serve.

This meal is fun to make with the kids and it will introduce them to something tasty and healthy to eat rather than junk food. This can make a wonderful meal as well as a healthy snack. You can use a varierty of vegetables to make the wraps, so please, do not limit your self to those mentioned above. ENJOY!!!

I actually tried the mushroom rice recipe yesterday. It was delicious...LOL. Im not sure about eating wraps with rice, might be a bit too much carbs, dont you think?

Thanks Moonlake, it is a great recipe. Im continously surprised at how vegetables can taste just as good as meat dishes when prepared right.
