HOW TO COOK A PASTA SAUCE FROM SCRATCH

How to Make a Pasta Sauce

From Scratch

Ingredients

2-bell peppers

1-medium onion

3-Cloves of garlic

1-can of mushrooms (Optional)

½ cup of olive oil

Salt Black pepper

Oregano parsley basil

Grated parmesan cheese

Pinch of sugar

1-can to tomato paste

1-can of whole tomato’s

1-can of tomato puree

1-can of kitchen ready tomato’s

2- Cans of water

Now first thing to do is dice all your Peppers/onions/and chop the garlic, then in a large Pot Pour your olive oil on a low heat, and add your Peppers/onions/mushrooms salt and black Pepper And cook until they are soft, and then you can add Your garlic, but only cook the Garlic for a short time.

You don’t want the garlic to turn brown this will give You sauce a bitter Taste, then add your Tomato puree With a can of water, and your kitchen ready Tomato’s, and Another can of water, then cut your Whole tomato’s in small pieces and add that to the Sauce, And stir keeping the heat on a low setting.

Then your ready for your spices add 2 pinches of Oregano parsley basil and ¼ cup of Grated cheese And stir on a low heat, now add a pinch Of sugar in The sauce, this will keep Some of the acid mild and Help with your sauce.

Now its Important to taste as Your cooking to see if you need more seasoning and Can adjust As it Cooks, the cooking time is about 1 ½ To 2 hours on a very low heat, and keep stirring to Insure that it doesn’t burn on the bottom during this Time, you can add some of you tomato Paste by the Spoon full, I like to mash it along the sides of the pan And then stir it in to the Sauce.

This will start to make Your sauce nice and thick, tip (use the whole small Can of paste Until its Gone) this way it come out nice And thick,, it also sticks to pasta better when thicker, After Simmering for 1 ½ to 2 hours on a very low Heat, boil your pasta in a large boiling pan, And Add Salt to the pan just before you add your pasta.

Tip( if You add your salt before its Boiling it doesn’t flavor Your pasta it boils away), so add Just before your Pasta goes in and Boil for about 8 to 10 minutes, Depending on what kind of Pasta your cooking this Will feed About 6 to 10 people and you should have Left over’s as Well.

THANK YOU... THIS IS MY FAVORITE RECIPE I MAKE THIS ALL THE TIME AND FREEZE WHATS LEFT OVER THEN MAKE IT AGAIN A FEW WEEKS LATER WHICH SAVES MONEY AS WELL.

AS YOU KNOW THE ONLY DIFFERENCE BETWEEN SCRATCH,IS I DIDN'T SQUEEZE FRESH TOMATO'S, BUT UNLESS YOUR IN ITALY WHO REALLY SQUEEZES FRESH TOMATO'S IN THERE SAUCE, I HAVE GOTTEN 1500 HITS ON THIS SAUCE SO I MUST BE DOING SOMETHING RIGHT.. (ROBIN)
