How I got the recipe.

I got married at the age of twenty. I will not say the marriage was bad from day one, but from day two I could feel something was wrong. After Fourteen years of trying I gave up and filed for divorce. I walked away from that marriage with five things of value: One, two wonderful children. Two, life experience. Three, the HVAC trade. Four, a child support payment. And five, a GREAT recipe for Enchiladas!

What you'll need.

  • 1 lbs of Ground beef
  • 1/4 to 1/2 lbs mild chedder cheese
  • 1/4 to 1/2 lbs monterey jack cheese
  • 1-12 to 15 oz jar of chunky salsa (mild, medium, or hot)
  • 6 small cans or 3 large cans of tomatoe sauce
  • 1 lg can of pitted black olives (chopped, or buy whole or sliced to chop youself)
  • 1/2 medium onion
  • 1 small can dice jalapeno peppers
  • 1/4 teaspoon seasoning salt
  • 1/4 teaspoon of Cumin
  • 1 13'x9' pan
  • 3 doz. corn tortillas
  • 1 cup water
  • 1 medium pot
  • one frying pan
  • a comfortable work area


DIRECTIONS

Combine salsa and Tomato Sauce in pot to simmer on low heat. Chop onion and olives (or use food processer) until fine.Add them to sauce mixture. Grade cheese and set aside. Place seasonings, ground beef and water, (thats right , water) in frying pan over medium heat. When water starts to boil, reduce to simmer. Stir frequently breaking up meat until meat is completely brown. Add water as need (not too much). Pour of excess water when meat is cooked completely through. (This helps get rid of a lot of greese as well as leave your meat with a nice texture.) Turn off sauce and let cool enough to work with. Heat tortillas, about 4 at a time in microwave with a slightly damp paper towel for one minute, ( or use the traditional method of of 'quick frying' in oil). Tortillas should be pliable and not "brake" when folded. Pour a thin layer of sauce in bottom of th pan. Lay warm tortilla flat. Stuff with about one tablespoon of meat, one tablespoon of sauce and one tablespoon of cheese. Keep assembling until the pan is full.top with remaning sauce and cheese. back at 400 degrees until cheese is melted. ENJOY!
