Scottish Recipe

The 'Ham and Haddie Pie' is a classic Scottish recipe that marries bacon (the ham) and haddock (the haddie). The original recipe comes from the West Coast of Scotland, traditional home of the haddock.

Ingredients:

  • 375g smoked haddock
  • 125g chopped bacon
  • 250g tomatoes, sliced
  • 60g grated Cheddar cheese
  • 1 small onion, chopped
  • 1 garlic clove, finely sliced
  • 60g breadcrumbs
  • 2–3 tbsp water
  • butter for frying

Method:

Melt the butter in a pan and fry the onions and garlic until soft. Add the chopped bacon and cook for a further 3 minutes. Grease a mediun-sized ovenproof dish and arrange half the tomato slices in the dish before covering with the onion and bacon mixture. Place the haddock on top of this and top with the remaining tomato slices.

Add the water and sprinkle the breadcrumbs and cheese on top. Cover with a lid or with aluminium foil and cook in an oven pre-heated to 190°C for 20 minutes. Remove the cover after this time and cook for a further ten minutes (or until the topping has browned).
