Harvest Oatmeal Cookies
¾ Cup Olive Oil Margarine
3Tsp. Molasses
3Tsp. Honey (Organic is best)
½ Cup Brown Sugar
½ Raw Sugar Granules
1Tsp. Baking Powder
¼ Tsp. Baking Soda
1/3 Tsp. Ground Cinnamon
2 Eggs (Use only 1 egg yolk for lower Cholesterol)
1Tsp. Vanilla
1 3/4 Cups Wheat Flour
2 Cups Rolled Oats (Long Cooking Oatmeal)
¼ Cup Craisins
¼ Cup Raisins
¼ Cup Carob Chips (unsweetened)
¼ Cup Sliced unsalted nuts (Almond or Soy are healthiest) optional
Directions
Preheat Oven to 375*
In a large mixing bowl, blend together the margarine, brown sugar, raw sugar, baking powder, baking soda, cinnamon, molasses, vanilla and honey with an electric blender on medium. Now beat in the eggs, and flour. Using a large spoon, stir in the Oats now until they are good and moist. Now stir in the Craisins, Raisins, Carob Chips, and Nuts.
Use a non stick cookie sheet. Spray it with Pam. Drop rounded Teaspoons of dough on the cookie sheet 2” apart (in every directing). Bake them for 8 to 10 minutes. Let them cool for a few minutes before you remove them with a spatula from the cookie sheet. It is best to put them on a wire rack until they finish cooling if you don’t they will stick together!
I took a standard Oatmeal Cookie Recipe and altered it to make a healthier, tastier cookie! I made them for my family and they really enjoyed them! They have a wonderful spice flavor to them that reminds me of "Fall".

breakfastpop, thank you. My Father just spread peanut butter on top of one of the cookies I made and ate with a glass of milk! New twist on cookie eating I guess :)
I guess that's the diet out the window for me! they look scrumptious.
Don't worry too much about the diet! These are pretty healthy cookies! As long as you don't eat the whole batch at once you'll be fine! :) I usually eat one good sized cookie for breakfast with a glass of 1% Milk. It is just like eating a bowl of cereal or oatmeal with fruit in it and in addition it also has protein in it!
