Menu:
Marisue's Lucky Broccoli Soup with Crusty Cheese Bread Topping
Iceberg Lettuce Salad and Tomatoes with Sally's Trove Russian Dressing
Better Than Ice Cream Cookies n Cream
Lucky Broccoli Soup
Serves 6 (or enjoy leftovers)
- 1 bunch of broccoli
- 2 leeks, sliced
- 1 celery stalk, chopped fine
- 1 garlic clove crushed (or more to taste)
- 1 large potato, peeled and diced
- 4 cups vegetable stock (or chicken broth but veg. stock is heartier)
- 2 bay leaves whole
- freshly ground pepper - coarse ground is best
- crusty bread
- grueyre cheese - 2 cups, grated
Procedure:
- Cut the broccoli florets off and set aside
- Cut the thicker stalk into small slices, about 1/2 inch and place in large pan with the leek, celery garlic, potato and vegetable stock and bay leaf.
- Bring to a boil, then reduce the heat, cover and simmer for 15 minutes.
- Choose the crusty bread of your choice and slice into thick slices. Brush with oilve oil and toast both sides in a 450 degree oven, just until lightly brown and crisp.
- Add the broccoli florets to the soup and return to a boil. Reduce the heat, cover and simmer for another 3 - 5 minutes, until all is tender.
- Remove the soup from heat and cool slightly. Discard the bay leaves. Puree the soup in small batches in a food processor until smooth.
- Pour the soup into 6 oven ready individual serving dishes. Pepper to taste.
- Place one or two slices of the toasted bread on the top of the soup in each dish. Add a generous amount of the shredded cheese. Place dishes on a cookie sheet. Put in oven for 2 - 3 minutes, (450 degrees) just until cheese is melted.
Remove and enjoy with an iceberg lettuce and tomato salad and Sally's Trove's Russian Dressing:

- Cool Whip, slightly Thawed for stirring
- Crushed Oreo Cookies (double stuffed if you dare)
Stir together and then refreeze for 30 minutes. Dip and serve....YUM, - slightly less fattening if you use Light Cool Whip --slightly.

I think the Russian dressing is a perfect complement. Thank you for linking to my recipe, marisue! However, personally, if I made that soup, I'd never get to the salad, and they'd have to wheel my comatose self off to the happy hunting grounds. So I may as well save the lettuce and not make the dressing.
